Homemade Hummus

I don't know if I've ever been as excited to post a recipe as I am to post this hummus recipe! Hummus is something that I really eat all the time - I love having it with pita and with veggies! It makes such a great snack! I'm so used to cooking and baking that the end product doesn't always excite me, but this hummus had me so excited! It was so fun to make and the end result packs a little more flavor than store bought hummus.

Vanilla - Chocolate Swirl Cupcakes

Years ago (I think I was 14 or 15), I tried making marble cupcakes and they turned out terrible! Because of that major flop I have been so intimidated to try marble cupcakes again! I finally worked up some courage and tried them again 2 weeks ago and they turned out so good! Not only did they turn out well but they were easy as can be!

Everything about these cupcakes were half chocolate & half vanilla - I'll share every little detail about how I did that. But first - I finally have a great vanilla cake recipe to share! I have been on the hunt for one forever. I have tried so many that I just didn't love! You probably already know that I am madly in love with my chocolate cake recipe, because it's so reliable! I found away to transform my beloved chocolate cake recipe into vanilla cake! How amazing is that!? I was so excited! And I am so happy to finaly have a great vanilla cake recipe to share!

Sweet Potato Black Bean Burgers

I saw these burgers over the summer and I knew they would be a big hit in my family! They do not taste like a traditional burger at all - they are more similar to a fajita but in a burger bun... does that make sense!? They come together so easily and they make the most delicious dinner. The burgers are vegan and I was impressed to discover how easy yet tasty they were! I am most definitely not vegan, but I love to go meatless every once and a while!

YULeat 2017

This past weekend, the YULeat festival was hosted at the Old port of Montreal. My family got tickets for my dad's birthday and we had so much fun! YULeat is an annual event that celebrates food - so guests just walk around and visit little booths or food trucks to try different food. Today, I'm recapping our day at the Old Port!

Pancakes (+Gluten Free Option)

When my mom went gluten free in January, I remember thinking 'now everything she eats will be gross!' So not true, but many things that are gluten free just don't measure up! And I still stand by that! Cooking and baking gluten free is hard and the end result isn't as reliable! I tried making a gluten free pie crust a few months ago and it was a major flop :( When I find great recipes that work just as well when they're gluten free, I get pretty excited! Good food is important in this house!

A couple of weekends ago, I went to an early morning yoga class and came home with a serious hankering for pancakes! I wanted the fluffiest pancakes and I wanted them fast! I found a great recipe on a blog called Mm Good, you can find it HERE. I made half of the recipe with all-purpose flour and the other half with gluten free flour. I felt it was my duty to try both - it's part of the job, right!? I am thrilled to report that I couldn't even tell a difference! They were equally as fluffy and they were both delicious!

Brownie Bottom Cookie Dough Cheesecake

A couple weekends ago, I made this cheesecake to celebrate my birthday with my grandparents. I mean, It's been way over a month and the birthday festivities are just coming to a close. i don't know how I drag my birthday on for so long, but I am thrilled at any opportunity to have cake! :) This cake was such a delicious combination of brownie, cheesecake and cookie dough! Pupsicles

Today, I'm talking about a little treat that I put together for my dog during the summer! But first, a little life update - I have been in my school with my cooperating teacher for a while now! We've been decorating and setting up some welcome activities for the kids on the first day! And today is the day! We will have 19 little six year olds coming in bright and early to kick off their school year! I am anticipating a lot of work but a lot of fun! I am so excited to spend 4 whole months in the first grade!

Roasted Beet & Kale Salad

This roasted been and kale salad has been a longtime favorite in my house! The beets and kale are paired with maple candied walnuts and goat cheese - when it's tossed all together it tastes so good you almost forget that you're eating kale! :) I am not crazy about kale! I love the nutrients it offers your body, but I don't love the way it tastes! This salad is my favorite way to eat kale!

My family has been doing yoga together on our back deck this summer - an instructor comes and we get our yoga on! :) Our teacher plays music during yoga and last Wednesday, I spent the entire yoga session asking 'What song is this?' Homemade Pesto

I am finally sharing this pesto recipe! I try to get at least one recipe up each week and I was pushing it this week! The real goal is to get 3 recipes up per week, but I occasionally let myself slip down to one during busier weeks! When the power went out on Tuesday, my blogging plan for the week kind of crumbled! I'm so glad to finally be sharing one of my favorite recipes ever!! I could eat pesto everyday and you wouldn't hear me complain once! I love versatile it is and I just never get sick of it!

My mom has been making this pesto recipe for years, and really, nothing compares! I have tried so many (I mean, probably hundreds) store bought and restaurant pestos and nothing has come close to being as good as this recipe! I love strong & flavorful pesto - lots of basil & lots of garlic makes my heart happy! Here is how we do pesto around here...

When the power goes out

Yesterday, I sat down to write a fun blog post for today but it started storming like crazy and the power went out! I was planning on sharing my pesto recipe but I didn't get to write 2 words before the power went out - ugh! And then it stayed out for 9 hours!! The Eclipse of 2017

Yesterday, there was an eclipse and I was pretty psyched to see how the eclipse would play out! I had been hearing so much hype and excitement about the whole situation - we had a partial solar eclipse in Montreal, so it didn't get completely dark but it was still pretty cool! We made a pin hole camera to watch the eclipse. A Beach Bag and Heat Transfer Vinyl Tips

Banana Bread

When I first started a blog, I wrote a list of recipes on a tiny little post-it note that I knew I wanted to share at some point. I started a blog on a major whim, which is so out of character for me. I'm a major planner, so having that little post-it full of recipes settled my mind big time! This is one of the first recipes that I wrote down and I am so excited to be sharing it over a year later!

This is a recipe that my mom has been making for my entire life - I think I was stirring banana bread for her before I could form coherent sentences! It's definitely a favorite of mine because of its familiarity but also because it is so easy to make! In fact, it is so easy that I only had to take 5 pictures of the process! Lemon Meringue Pie

I made this pie almost a whole month ago for my Uncle Darryl's birthday and I am just getting around to posting it now - how is that possible!? I hardly remember making this Lemon Meringue Pie, but I will do my best to detail all the steps for you! The original recipe is from a blog called Crazy for Crust - how cute is that?! You can find it HERE.

Start by making a pie crust and pre-baking it in an 8'' or 9'' pie plate. You could buy pre-made pie crust from the store or you could make your own pie crust! You can read all about how I do pie crust HERE. I included a little video in that post to share some extra tips! The pie crust should be cooked and completely cooled before filling it!

Baking Supply Labels

I had a completely different post planned for today, but I moved things around because of this little project that I finished on Sunday! This project has been a long time in the making! Pesto, Tomato & Mozzarella Stuffed Chicken


I should preface this post by saying that dealing with chicken is my least favorite kitchen duty. I don't love working with any meat really, but I find chicken the hardest! If I were to ever go vegetarian, my aversion to raw meat would be the main reason for my vegetarianism! This recipe involves a whole lot of raw chicken work - bleh! If you don't mind it, this recipe is great for you. If you struggle, as I do with raw meat, please know that the end result is so so worth it!!

Friday Favorites: at the beach!!

Usually, I'm rather excited when Friday rolls around but I have been dreading the arrival of this Friday because it means my first week at the beach is over! I am so very lucky to have a second week to look forward to! Here are the best parts of this week...
1. First up, let's talk sunglasses! I hate spending large amounts of money on sunglasses only to throw them in the bottom of a beach bag! I typically pick up a pair of sunglasses while I'm on vacation for less than $15 and wear them all year long! Last summer I got a pair from Sam Edelman's Circus collection from TJ Maxx for $12!!! I wore them all year and I still love them so much! I have worn them every single day at the beach and I couldn't love them any more!

Butter Chickpeas ( a Vegan & Gluten Free Recipe!)

I made this recipe a couple of weeks ago and since then, someone in my family requests it almost daily! My mom has been Gluten free since January, so I am always on the lookout for tasty gluten free recipes - when this popped up on my Pinterest feed, I was intrigued! My family is not vegan (or even vegetarian for that matter) but I like to try to go meatless as often as possible! I strongly encourage you to try this yummy take on the traditional Butter Chicken even if you are not vegetarian/vegan/gluten free... it is that good!

Pie Crust (day 2): Lattice Top

I've experimented with Lattice Pie Crusts in the past, but I've only recently had success. It is surprisingly easier than it looks and once you get the hang of it - it somes together so quickly! Yesterday, I talked about making pie crust (you can read that HERE) and today, I'm expanding a little bit!
Once you've lined the bottom of your pie plate with a layer of crust, and filled the pie - roll out the remaining crust. The shape is less important at this point, you could roll the dough into more of a rectangular shape.

Friday Favorites: 1 week 'til the beach!

Happy, happy Friday! In exactly one week, I'll be celebrating my 21st birthday before heading off to my favorite place in the whole wide world for a little beach time! I know next week will be full of good things but here are the best parts of this week...
1. This week, I got to see my friend Lauren! We had big plans to make some sort of summer-y dessert but were side tracked but the chilly weather and our craving for fall. So, we made these most delicious pumpkin rolls! I do realize that it's not October but these were to die for even in July!! I really am soaking up these summer days and enjoying a little sun, but I am so excited for the fall! If you are craving a little fall in your life too, I highly recommend these rolls! Strawberry, Quinoa & Cashew Salad

This salad just screams summer to me! When I made this last week, my family enjoyed it with some Italian Sausages on the barbecue - it was sooo good! The Bean has loved lending a hand in the kitchen this summer, but all she wants to do is stir!! She was thoroughly unimpressed with this salad, because there is very little stirring to be done! I was worried she wouldn't eat the salad (she tends to be less willing to try if she isn't involved in the process!) but she loved the salad! This got rave reviews all around!

I found the recipe on Julia's Album, you can find it HERE. I swapped out the peaches for Nectarine (an intentional change) and used much less spinach than called for (an unintentional change), but otherwise I followed the recipe exactly!

Nanaimo Bars

On Canada Day, I was wanting to make a festive treat for my family to have. But I didn't want to go crazy with white and red - I wanted it to be festive and a little patriotic without screaming Canada :). Nanaimo Bars are named after a city on Vancouver Island in British Columbia called Nanaimo! They are one of my favorite treats and they are so fun to bake!

Nanaimo bars are composed of 3 layers - the bottom is a mixture of chocolate, coconut and graham crackers, the middle layer is a custard then the top layer is made from melted chocolate -so good!!

Chicken Enchilada Casserole (a.k.a. the easiest dinner ever!!)

My family had this casserole for dinner a couple of weeks ago and I have been anxiously waiting to share it! This is the easiest recipe, so easy that I only took 6 (SIX!!) pictures while I was making it!! I found this recipe on Jo Cooks, you can find it HERE. I found the recipe a little bland - it was tasty but just lacking a little something! In the future, I would chop up some avocado and serve the casserole with a little avocado and salsa on the side.

Start by cooking 1 cup of dry Basmati rice (to end up with 2 cups of cooked Basmati rice) and cooking 1-2 chicken breasts (I used 2 small chicken breasts). I boiled the chicken until it was cooked through then removed it from the boiling water and let it cool in a mixing bowl. Once the chicken is cooled, shred it using 2 forks.
